Here's a simple and hearty "green" meal recipe in honor of St. Patrick's Day that's a bit more budget and kid-friendly than corned beef and cabbage. Simple Green Bean & Hamburger Casserole
MAKES: 4 servings (or 6 with increased optional ingredients)
PREP TIME: 15 minutes
COOK TIME: 30 minutes
INGREDIENTS:
- 1 lb ground beef
- 1/2 cup onion, diced
- 2 14.5-oz cans green beans, drained and rinsed
- 2 10.5-oz cans cream of mushroom soup
- ½ cup milk
- 1 cup grated cheddar cheese
- OPTIONAL: baked or mashed potatoes, pasta, or rice to serve over
DIRECTIONS:
- Preheat oven to 350 degrees.
- Brown ground beef and onion in a skillet over medium heat, then transfer to an oven-safe 1 1/2 qt casserole dish.
- Mix green beans, soup and milk together and pour over beef and onions.
- Top with grated cheese.
- Bake in oven for 30 minutes.
- Remove from oven.
- Optional: serve over cooked potatoes, pasta, or rice.
