Did you know that January is National Soup Month? A steaming hot bowl of soup is a welcome warm-up during the cold weather months! Soup can be an economical, healthy meal choice that's easy to prepare and adapt to whatever items you have in your pantry. For example, with this month's recipe, you can use whatever kind of canned beans (pinto, kidney, etc.) you have on hand in place of the black beans. You can substitute a different protein source (such as leftover meat from another meal) and a different type of canned tomato (petite diced, etc.). If you wish, you may top this soup with shredded cheese, fresh veggies, a dollop of sour cream, and even tortilla chips! Be sure to choose reduced/no salt added ingredients if possible to reduce the total sodium per serving. This recipe is very easy to double (or even triple!) depending on the size of your family. Leftovers are great, too, and reheat easily either on the stovetop or in the microwave! Our recipe is adapted from a recipe provided by our friends at the UNL Food/Nebraska Extension office. FIVE CAN SOUP
Servings: 4 | Prep Time: 5 Min | Cooking Time: 15 Min
Ingredients
- 1 (15 ounce) can corn, drained
- 1 (14.5 ounce) can chicken broth, low sodium
- 1 (10 ounce) can chicken, drained
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (10 ounce) can diced tomatoes with green chilies, drained
Directions
- Wash hands with soap and water.
- In a large saucepan, combine corn, chicken broth, chicken, black beans, and tomatoes.
- Bring to a boil. Cover, reduce heat, and simmer until heated through.
