Happy National Soup Month! It's hard to beat a warm bowl of soup for supper on a cold winter night. Soup is a great meal choice because it's delicious, economical, and easily adjusts to your family's unique tastes. Plus, by doubling (or tripling!) the recipe, leftovers become the next night's supper (or even a week's worth of lunches.)

Ham & Bean Soup
MAKES: 6 servings

INGREDIENTS:
- 3 cans (15 to 16 oz.) your choice of beans (green, navy, red kidney, black, etc.), rinsed and drained
- 1 can (15 to 16 oz.) potatoes, rinsed and drained
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 can (14.5 oz.) chicken broth
- 1 cup diced ham (6 ounces)
- 1 medium onion, chopped (1/2 cup)
- 1 clove garlic, finely chopped
- 1 teaspoon chili powder
- 1/4 teaspoon pepper
DIRECTIONS:
- Wash hands with soap and water.
- In a large saucepan, combine all ingredients.
- Bring to a boil. Cover, reduce heat, and simmer for 15-20 minutes.
