Here's a creative recipe using two very familar grocery list items- green beans and ground beef! This recipe features a delicious marinade for the beef and a quick cooking time to fit into a busy work night. It's perfect served over steamed rice alongside a fresh green salad and fruit. Green Bean and Ground Beef Stir Fry
MAKES: 4 servings
PREP TIME: 10 minutes
COOK TIME: 20 minutes
INGREDIENTS:
- 1 lb ground beef
- 1, 15-oz cans green beans, drained and rinsed
- 1/4 tsp red pepper flakes to taste
- 2 tsp fresh ginger, grated
- 2 cloves garlic, minced
For the marinade:
- 1/4 cup low sodium soy sauce
- 4 cloves garlic finely minced or grated
- 1 tablespoon sesame oil
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon ginger root grated
- 1 teaspoon chili garlic sauce
- 1 tbsp Cornstarch
DIRECTIONS:
- Whisk together all ingredients for the marinade. Place raw ground beef in a medium-sized bowl, pour marinade over beef, and stir to fully combine. Set aside for 20 minutes.
- Heat a sauté pan over medium-high heat. Add the beef mixture, ginger, garlic, and red pepper flakes. Cook until browned.
- Add in the drained can of green beans and cook until heated through.
- Continue cooking until excess moisture has evaporated.
