Food Market recipe: Ham & Bean Soup

Happy National Soup Month! It's hard to beat a warm bowl of soup for supper on a cold winter night. Soup is a great meal choice because it's delicious, economical, and easily adjusts to your family's unique tastes. Plus, by doubling (or tripling!) the recipe, leftovers become the next night's supper (or even a week's worth of lunches.)

Ham & Bean Soup

MAKES: 6 servings

PREP TIME: 5 Min

COOKING TIME: 15-20 Min

INGREDIENTS:

  • 3 cans (15 to 16 oz.) your choice of beans (green, navy, red kidney, black, etc.), rinsed and drained
  • 1 can (15 to 16 oz.) potatoes, rinsed and drained
  • 1 can (14.5 oz.) diced tomatoes, undrained
  • 1 can (14.5 oz.) chicken broth
  • 1 cup diced ham (6 ounces)
  • 1 medium onion, chopped (1/2 cup)
  • 1 clove garlic, finely chopped
  • 1 teaspoon chili powder
  • 1/4 teaspoon pepper

DIRECTIONS:

  1. Wash hands with soap and water.
  2. In a large saucepan, combine all ingredients.
  3. Bring to a boil. Cover, reduce heat, and simmer for 15-20 minutes.
